Its Getting Closer!!

Well, my big trip to Wacko to run for the trucks is a week away! I cant wait! I am running #44 on Friday Day meaning I will run around 10am. Maybe earlier cause they run 60 an hour and they start at 9am.....I am very excited! The farrier is coming over today or tomorrow and the chiro is going to work Gabe over on Friday as well. Jeff has decided to get to work on the trailer...LOL of all the weekends....He is going to hang two doors (of three...ugh) and I am going to get it sanded and stained. My friend Michelle and her Mom bough the foam and the vinyl to do the cushions. So, my trailer will almost be done at WBR. I am so excited! At least I will have doors on my nose cabinets to keep Gauge out of stuff. She figured out how to get into the bed by herself...Anyhow, I bought a couple of hooks to hang keys and to hang my hat on. I keep it in a hat box but once I get there, I have a BAD habit of not putting it back into the box.....So now I have a place to hang it! YAY! Brooke and I will be hauling two trailers so that there is enough room for me, her and her daughter to sleep. I think that will be best and now that fuel prices have gone down, maybe we can afford it and still have money to eat on or whatever. Anyhow its should be a great weekend! Whether we win or not, I bet it will be fun! We will get to hang out with friends and drink some beer.....And just be barrel racers for 3 nights and 4 Days! Competition will be stiff, but it is all about having fun! One thing that is most awesome is that this is the finals. I would have never thought I would have a chance to run Gabe at the World Barrel Racing Finals!!

OH, Yummy!!!

GEYSER PEAK CRAB QUICHE BITES



4 small scallions or shallots

2 tablespoon butter

1 lb crab meat (l large crab)

1/2 cup Geyser Peak Johannisberg Riesling(or other Riesling)

6 large eggs

2 1/2 cups milk

1/2 teaspoon salt

1/2 teaspoon pepper

10 ounces Swiss cheese, grated

Phyllo sheets - l/2 pack

Melted butter



Heat oven to 350 degrees. Chop, then sauté scallions for 2 minutes in large fry pan. Add crab to 1/4 cup Riesling. Simmer on low 5 minutes until liquid is absorbed. Whip eggs, milk, salt and pepper until well-blended, then add crab mixture. Set aside.



Cut phyllo into 3" x 3" squares. Working quickly, butter one square, add another and butter that square, add a third and butter that square. Turn the three sheets over and press into l 3/4" mini muffin pan cup. Repeat. Once all the cups have been filled, spoon some of the crab, cheese and liquid into each cup. Bake in 350 degree oven for 20 minutes. Let cool, then remove from cups.



Tips on working with phyllo: spread waxed paper over your work service. Dampen a kitchen towel so that it is slightly moist, not wet. Unroll phyllo, then place it on waxed paper. Cover thoroughly with another sheet of waxed paper, then place dampened towel on top of second sheet of waxed paper. Have butter for brushing phyllo melted and ready to be used. For this recipe, cut the squares of phyllo but keep them under the waxed paper and towel, taking out only what you can work with at one time. Start with one square, then increase as you can to do more at one time.



BLACK BOTTOM CHEESECAKES



l 8 oz pkg. cream cheese

l teaspoon baking soda

1/3 cup sugar

1/2 teaspoon salt

l egg beaten with 1/8 teaspoon salt

l cup water

l c. chocolate chips

1/3 cup oil

l l/2 c. flour

l tablespoon vinegar

l cup sugar

l teaspoon vanilla

l/4 cup cocoa



Mix cream cheese, sugar, egg and salt with electric mixer. Stir in chips. Whip flour, sugar, cocoa, soda, salt, water, oil, vinegar and vanilla until creamy. In petit-four pans, put liners. Fill each cup l/2 full with chocolate mixture, top with cream cheese mixture. Bake at 350 degrees for 15 minutes, then remove to cooling rack.
Betty’s Chocolate Balls



2 l/2 cups graham cracker crumbs

l lb. powdered sugar

2 sticks margarine (don’t substitute butter or lard)

l l2 oz. jar extra crunchy peanut butter

7 oz coconut (optional)



Melting chocolate for coating



Melt margarine and peanut butter in microwavable container, using 30 second blasts. Add sugar and graham cracker crumbs (and coconut if desired). Use hands to mix ingredients.



Make small balls (good bite size ones), let cool. (Note: at this stage, you can pack balls in layers of waxed paper and freeze them in an airtight container).



Thaw balls if frozen. Melt chocolate in microwave. Lay out a strip of waxed paper to put dipped balls on. Dip balls in melted chocolate. Place on wax paper to dry. When dry, pack in airtight container. Ok to make 30 days ahead.

Hey Folks!

Well, sorry! I have been busy working on my website and forgot to come over here to update! Basically, it is DONE! I put up a page where you can email me tack and other stuff to "trade" or sell. Doing it for free to help bring more traffic to my site. www.rachaelsequineservices.biz
Next up, I went to the Doctor on Friday! She told me to RIDE! RIDE! RIDE! So ,I have been doing so! She also put me on Zanaflex which has some how managed to TAKE AWAY ALL MY PAIN! Weird!I woke up after taking my first dose and was not hurting! WTF? Anyhow, i am happy with it! It makes me sleep for a few hours, and I wake around 4am with no pain and I can go back to sleep till the alarm goes off. This has been impossible due to major pain in the past. So, so far ,so good. Also, the chiro has set me back to once a week...THANK GOD cause it costs me $30 each time!!
Next up, i got my blackberry phone...Well, i traded my phone for a blackberry. Now i have internet all the time!! :)
We will be heading to Waco on November 6th for the WBR finals! YAY!! Gabe and I are working on getting back in shape for this run! We are running for a chance at a dodge pick up as well as over $100,000 added money and a TON of barrel racers!! I cant wait!!
I am also going for the record of holding the longest running chat room thread. My thread is located at http://ebarrelracing.com/forum/index.php/topic,10283.0.html so far, I am only 4,000 replies short. Um, the other longest thread has been going for 8 years and mine only a year and a half. I am sure we can beat it!! I have been working on painting my bathroom and doing some repairs. It is starting to disgust me! I am going to apply to the extreme makeover home addition today as well. I think we could get it!!

I Changed My Website!!

Well, after a lot of thought, I decided that my website needed a face lift! So, i completly re-did it.....go look! www.rachaelsequineservices.biz
Yup, it took up most of yesterday as well as today. But, i think it was worth it! :) I also got a blackberry pearl again! Dang it....I am trying to remember how to use it and I guess I have to go read the directions....grrrrrr.

Its Sunday!

Well, been a weekend and a half. The farrier came out Yesterday and did 7 of the 8 horses. Cooter also got his halter changed out and he was so cute about it!! He would not let me catch him to change it. So, when I went to go put everyone up for the farrier, I managed to catch him in a small stall. I gently put the lead rope over his neck and he kind of set back a little, then i explained to him why it was important.....LOL he let me put the new one on over the old one and I exchanged the two halters. Then, I rubbed the dent in his nose where the other halter was rubbing him raw. He seemed to like that! He has never let me rub his face, so this was a BIG change!
Dually was the best out of all the horses for his feet yesterday. In fact, he was an angel!
Lynx is doing good. He and the farrier had their argument, but they came to an understanding. I found out that he loves his tail brushed!!! LOL At first, he wanted nothing to do with all of that....then, he decided that it was awesome!!!
Today, i cleaned the horse part of the trailer. I did too much, but it need to be done and the fact that I got up and did something made me feel so much better! I got out the EQ Solutions and pulled the mats up and all. I scrubbed. The white is now white! LOL Then, Jeff came home for lunch and he put the second slant and the saddle rack back in there. I added velcro strips to the saddle racks to help with the traction for the saddles. They keep falling off the slick rack. I dont think i have to worry with that now!!! YAY!!! Brooke said she is coming over to ride tonight. Bad thing is, i have done way to much today and I am in a lot of pain. Maybe she will help me feed and such.

Me and Gabe in Wacko!


This is me and Gabe at the WBR Wacko race this Labor Day! I just wanted to show you guys!

Some times I really wonder....

Oh, gotta love the marriage talk! What this time? I am tired of being BROKE and WE are not BROKE. But I am. So, i again proposed the joint account. This time it was to either be there for spending money (groceries, fuel) or be there to pay bills. Hubby says "cant I just transfer money into your account?" So, I guess I am going to get an allowance every month for food. We shall see how that goes over.
All else it ok. I am sleepy and not feeling very good. Not sure why. I slept most of the day yesterday and went to bed at 8:45 last night. But, it is Wednesday, so almost time for the weekend! :)
